In the Hidden heart of Sicily, the beautiful surrounding of Casalvecchio became the perfect location for a flavorful immersion cooking classes.
A full immersion course designed for those who want to learn the real hidden secrets of the ancient kitchen, from the primary matter to the dishes.
The concept that built this course is to share the passion of cooking and bring with you all secrets about pasta, bread, cheese and extravirgin olive oil making for all experience levels.
12 May: Welcome in Sicily
Arrive at Casalvecchio with the Welcome aperitif and Canape. Settle into your room.
Meet at 8 pm for our 5 courses Dinner, with instructions of all training and you will receive Casalvecchio signature apron.
13 th May : Dairy Product ( From milk to cheese)
Breakfast at 8 am with large continental buffet. Leaving at 9 am for a morning visit to a local cheese factory to watch and make the traditional Madonie cheese, from ricotta to hard cheese tipycal of this area followed a testing of them and given the new techniques explained by our expert cheese makers. Return to Casalvecchio and Relax.
At 4 pm afternoon cooking lesson using the fresh cheese to make a satisfying full Italian menu, from antipast appetizer to dessert.
Dinner at 8.30 pm indulging in the success of your creations.
14th May : All the secret of the Wood Fired Oven
At 9 am Large Continental Buffet Breakfast followed the Bread Making workshop in Casalvecchio Wood Fired Oven.
Will be show how to prepare the bread by hands, time of leavening and the right procedure to bake and take out from the oven.
Tasting lunch with several type of aromatic bread just made.
Relax followed at 5.30 pm the pizza making workshop for a
Pizza dinner party together.
15th May: All pasta making secrets
Breakfast at 9 am followed pasta home made making workshop in wich will learn how to meke several type as pappardelle, tagliatelle and tortelloni with testing lunch of every single of your new creations results.
Afternoon free with the opportunity to visit the beauty of the neightboor villages.
Dinner at 7.30 pm
16th May : The real flavors of the Extravirgin Olive Oil.
Breakfast at 8.30 am followed at 10.00 visit in the historic land around thousand-years old olives three to undestard how the extravirgin olive oil is made and testing one of the best Sloow Food Product.
You will learn how harvest, and see the type of Crastu olives.
Testing lunch around the Olives tree with Extravirgin Olive Oil, bread and wine.
Return to Casalvecchio in the fternoon with the opportunity to walk around by the tractor road discovering few hidden trasures of the Sicilian Country side.
Dinner at 8:00
17th May : The Meat Flavours and the Cooking Method.
Breakfast at 8.30 am followed the Visit to Nebrodi Park to source the local fresh meat for the afternoon cooking lessons about the Meat Cooking Method.
We will walk around an amazing wild surronding with the light lunch outside.
Come back to Casalvecchio for the workshop explaining at 6pm followed our last nice dinner together with Live Music enjoing together what we learn and our impression and experience.
18th May: Casalvecchio Goodbye
Breakfast at 9am followed Casalvecchio Goodbye with few presents for our trainers to remember this unique experience.

Price: € 1300 in a single room; 2300 in double room for 2 people.
The price includes: accomodation, lessons, all meals, trip to local producers, wine testing, Breakfast, and all services in Casalvecchio. Upon request, we can organize a transfer service from palermo or Catania airport with just € 150 both way.
Accomodation: Casalvecchio rooms are really large cosy double and triple en-suite rooms, all with splendid views of the grounds and surrounding mountains. Every single room has different name depending of the view they got: Apollo, Aeoulus, Dyonisus, Hera, Demeter and Zeus.
